What do humans and other primates have in common with guinea pigs? Their bodies can't make Vitamin C and absolutely depend on adequate dietary intake. That's why diets lacking in raw fruits and vegetables make us vulnerable to deficiency symptoms such as poor wound healing, bleeding gums, and poor resistance to infection. With the abundance of produce filling grocery store shelves you may be surprised to learn that vitamin C was found by the CDC's NHANES study (2003-2006) to be the fourth most common nutritional deficiency in the United States--behind iron, vitamin D, vitamin B-6. Although Canadian data is limited, there's no reason to assume Canada would have better results. Let's look at why this nutrient is important to our immunity and how it's helped people with infection.
